Preparing the Pizza - Brooklyn, New York
The owner and pizza master - Domenico (or Dom) DeMarco - at Di Fara's Pizzeria "blesses" each pizza with olive oil (using deliberate flicks of his wrist), fresh (or dried) basil, and Reggiano Parmesan cheese. This no-frills pizzeria in Brooklyn is the stuff of legends in New York. The interior appears untouched since it first opened in 1965; most people do take-out since there are only a handful of places to sit and eat.
Dom makes each pizza himself, slowly and deliberately, aiming for the right balance of dough, sauce and cheese (three types of mozzarella).
