As I polish off a light lunch of pork cheek bourguigon and fromage blanc, it now occurs to me why so many people in this city are running, jogging, training for marathons. They are exercising to save their lives. It's pretty much the only way to survive the cuisine of the bouchons, the traditional Lyonnais family-run inn restaurants.
